PIZZA AGAIN!!

A while back I was thrilled about my version of Red Lobster’s Lobster Pizza when I shared my Tuscany-Shrimp Pizza and it was indeed a delicious treat.   I’m trying to behave myself because as I mentioned.. I freaking love pizza!  You know how you play around with a recipe and develop variations?  Well, just when I thought the Tuscany was good – this time I changed the seasonings and added Smokey Paprika Chipotle (in addition to the Tuscan).. Oh my God!! then topped it with fresh spinach.. Open up the heavenly pizza gates -LOL!!  Seriously though…. it’s so good..

Here’s the easy recipe:

1 12oz bag of pre-cooked shrimp, cleaned, deveined, chopped

2 tomatoes, chopped (remove the seeded part)

Kirkland brand Basil Pesto

1/4 cup chopped fresh basil

Grated Parmesan cheese

8oz grated mozzarella cheese

1 1/2 tspn Victoria Tuscan Seasoning

1 tspn Victoria Smoky Paprika Chipotle

1 1/2 tspn Spicy Garlic Seasoning

Fresh spinach

6 small flour tortillas

Olive Oil

Preheat oven to 380 degrees.  Heat a small frying pan and coat the bottom with olive oil.  Add shrimp and saute until liquid goes away.  Add all the seasonings and saute until shrimp is done, briskly stirring (take a taster and if more seasoning is needed add a bit more). Brush each tortilla completely with olive oil.  Then spoon small amounts of basil pesto on each tortilla and spread.  Sprinkle tomatoes and shrimp around.  Top with spinach and sprinkle with parmesan and mozzarella cheeses and top with fresh basil.  Place on cookie sheet (or pizza pan) and bake for approx 10 mins or until cheese melts and crust is slightly browned.

Remove, slice and eat up!  The best part is it’s less calories then your average pizza dough crust – yet you get the same satisfaction

  2. That looks like expensive seasoning…so I hope I win! The pizza looks incredible. I won something once. A pair of water skis. I have never water skied and had no plans of drowning myself and I don’t know what happened to them. Oh, wait, Kim, I just remembered I won a ViewMaster when I was a kid at a family company picnic. I won the race for running backwards the fastest. (?) ~Ginene.
