Brandied Salmon

brandied salmon2

My husband is not a salmon lover – but on the other hand – I am.  I’m trying different ways to cook it to alleviate me having to cook two different meals when I crave salmon.  I tried this recipe and with fingers crossed served it (with the mindset he won’t eat – he hates salmon).  To my surprise he actually liked it.. my excitement felt like the kid in the Life Cereal commercial..lol..So, I thought since it passed the Mikey taste test – I thought I’d share this simple recipe with you.

Brandied Salmon

  • 2 Salmon steaks
  • 4 tblspn butter
  • 1 tspn black pepper
  • 1 tspn garlic salt
  • 1/2 cup brown sugar
  • 1/4 cup Paul Masson brandy (or whichever brand you prefer)

Season salmon with black pepper and garlic salt.  Using a medium heat, melt butter in a cast iron skillet (making sure not to burn it), add brown sugar, stirring to dissolve it.  Add brandy and continue to stir.  Place salmon into pan and cook approximately five – seven minutes.  Flip over to cook the other side, being careful to not overcook.  Remove from pan and serve hot.  I served it with garlic mashed potatoes and sauteed fresh spinach.
