Breakfast is my favorite meal of the day and come the weekends I thoroughly enjoy it after settling with yogurt, toast and coffee M_F to start my day. Having farm fresh eggs around only entices me to create something yummy.. (I have to give kudos for the yardsale because it connected me with a pleasant young lady name Brandi, who is my new found friend/ egg supplier – woohoo- thanks Brandi and welcome to Whitmire).
Yes, these babies were the start of something scrumptious… and the main ingredient is bbq brisket prepared by my grillmaster brother, James. I was able to scoop me some to savor for a delicious omelet.
I was a bit skeptical about using it because the meat was basted in bbq sauce, but OMGeee.. I can’t tell you how amazing it was. The sweetness of the sauce blended with the savory flavors in the omelet and those farm fresh eggs was breakfast heaven.
No omelet is complete without chopped onions (Vidalia of course), fresh spinach and mozzarella cheese.

BBQ Brisket&Spinach Omelet
The savory flavor of bbq brisket makes a delicious breakfast omelet
- 2 lrg eggs well beaten
- 2 tbsp onions to your desire
- 1/2 cup fresh spinach to your desire
- 1/4 cup grated cheese mozzarella, swiss or cheddar
- 1/4 cup bbq beef brisket
- 2 tbspn olive oil
- 1 tbspn butter
- 1/2 tspn spicy garlic seasoning or garlic salt
Instructions

In small non-stick pan heat olive oil and butter. Add onions and saute approximately 2 mins. Add brisket and season with garlic seasoning. Add spinach and saute until all is cooked. Pour beaten egg over mixture and flip. Add cheese and fold over. Omelet is ready when cheese is melted and serve hot.
