Spinach and Onion Quiche

This is a quick and delicious savory quiche that is made of a custard filling blended with sauteed fresh spinach and onions and topped with cheese,

  • 4 large eggs
  • 1/2 cup heavy cream
  • 1/2 bag fresh spinach
  • 1 small chopped onion
  • 1/2 tsp spicy garlic seasoning optional
  • 1 medium clove of garlic minced
  • 1 tsp black pepper
  • 1 cup Pepper Jack Cheese Monterrey Jack or Swiss
  • 2 tbsp Olive oil
  • 1 tbsp butter
  • 1 pie crust

Instructions

  1. In a medium sauce pan, add olive and butter. Once butter is melted add onions. Saute onion until they are cooked, add spinach and minced garlic and continue to saute until spinach is wilted. Sprinkle with spicy garlic seasoning. Spread mixture into pie shell. In mixing bowl beat eggs until light and fluffy, add heavy cream and black pepper. Beat until blended and pour in pie shell. Sprinkle top with cheese and bake at 350 for approximately 45 mins or until firm.
