1bagshrimp, cleaned and deveinedcut into chunks
1jarSalsa
1blockpepper jack cheeseshredded
1tblspnSpicy garlic seasoning
1/2tspnTuscan seasoning
1/2tspnSmokey Chipotle Paprika
2tblspnOlive oilextra virgin
8smallflour tortillas
Instructions
Heat oil in medium sauce pan and saute shrimp. Season shrimp with with all three seasonings and cook until done. Remove shrimp and place in a small bowl. Heat another tspn of olive oil in pan (to cook quesadillas). On each tortilla, place a desired amount of shrimp, a scoop of salsa and top with cheese and fold in half.
