Baked Chicken with Golden Potatoes

  • 8 chicken thighs with bone and skin
  • 1 lrge onion, diced preferably Vidalia onion
  • 4 medium golden potatoes, peeled and sliced thin
  • 1 tsp salt
  • 1/2 tsp ground pepper
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1.4 tblspn olive oil

Instructions

  1. Heat oven to 350 degrees. Rinse thighs dry with paper towel. Season chicken with salt, Italian seasoning and pepper, set aside. Peel, slice and rinse potatoes. Season with salt, pepper and 1/2 tablespoon olive oil, set aside. Heat Dutch oven over medium high. Add 1 tablespoon of olive oil and onions. Saute onions until translucent. Add chicken thighs saute for five minutes. Remove from heat. add potatoes. Place in oven and bake until chicken is tender. Turn oven to Broil at 400 degrees and broil until chicken is golden brown and potatoes are toasted. Serve with your favorite veggies or rice.
