BBQ Brisket&Spinach Omelet

The savory flavor of bbq brisket makes a delicious breakfast omelet

  • 2 lrg eggs well beaten
  • 2 tbsp onions to your desire
  • 1/2 cup fresh spinach to your desire
  • 1/4 cup grated cheese mozzarella, swiss or cheddar
  • 1/4 cup bbq beef brisket
  • 2 tbspn olive oil
  • 1 tbspn butter
  • 1/2 tspn spicy garlic seasoning or garlic salt

Instructions

  1. In small non-stick pan heat olive oil and butter.  Add onions and saute approximately 2 mins.  Add brisket and season with garlic seasoning.  Add spinach and saute until all is cooked.  Pour beaten egg over mixture and flip.  Add cheese and fold over.   Omelet is ready when cheese is melted and serve hot.
