Hey Everyone!! Hope all is well with you and if you’re new here from Tamrya I’d like to welcome you to my corner space of the world wide web!  Let me start by saying.. “Can we all agree that we’re finally HAPPY that Spring has sprung? For a minute there I thought we’d be skipping right back to Fall.. LOL.. To show our excitement, me and few blogger buddies came together to say “HOLA!” to the season by having a Spring Soiree.  I mean, really, what better way to show excitement than by hosting a few friends over for dinner to kick off the beginning of glorious weather.  After getting all the cleaning out of the way, now it’s time to play hostess with the mostest.  So, if you’re planning a little get-together or tete-a-tete, we’re here to inspire you.  I hope you enjoyed the cocktail sip with Marsha, while indulging on the delicious appetizers made by Nicole… and wasn’t Tamyra’s tablescape beautiful!!  Well after all that – it’s time to feast on the main course and that’s where I come in.  It’s Spring and we want to keep the meal light and easy – because the goal is not to be in the kitchen all day – So I’m sharing an easy one-pot dish.

Baked Chicken with Golden Potatoes

 

The simplicity of making this dish coupled with the blended flavors, makes it one great Spring time hearty meal.  It’s sure to please your guests.

Baked Chicken with Golden Potatoes

Course Main Course
Cuisine American
Servings 8 people

  • 8 chicken thighs with bone and skin
  • 1 lrge onion, diced preferably Vidalia onion
  • 4 medium golden potatoes, peeled and sliced thin
  • 1 tsp salt
  • 1/2 tsp ground pepper
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1.4 tblspn olive oil

Instructions

  1. Heat oven to 350 degrees. Rinse thighs dry with paper towel. Season chicken with salt, Italian seasoning and pepper, set aside. Peel, slice and rinse potatoes. Season with salt, pepper and 1/2 tablespoon olive oil, set aside. Heat Dutch oven over medium high. Add 1 tablespoon of olive oil and onions. Saute onions until translucent. Add chicken thighs saute for five minutes. Remove from heat. add potatoes. Place in oven and bake until chicken is tender. Turn oven to Broil at 400 degrees and broil until chicken is golden brown and potatoes are toasted. Serve with your favorite veggies or rice.

And I love how easy the recipe is to make—perfect for people like me that want to spend as little time in the kitchen but create a dish that looks like it came straight from a chef’s kitchen.

    • Thank you Shelly – yea, we’re not spending too much time in the kitchen because the weather’s too nice out! So this is perfect combination of delicious and quick.

  7. As you know all too well I’m don’t enjoy cooking….this looks like something I’d be willing to to try and make! Honey loves a good chicken dish as do! I’m a big fan of a one dish meal…less to clean! Can’t wait to give this one a try!
