It’s Summer and quite frankly if you’re like me, the easier the meals the better I feel. I love having sandwiches for a light dinner and this recipe, thanks to using Ken’s Caesar Salad Dressing, they will be on our Summer’s menu quite often. The flavorful chicken blended with sauteed caramelized onions and mushrooms is a winning combination.
Topped with Swiss cheese
Caesar Chicken Sandwich
For a flavorful light sandwich, this sandwich is sure to please
- 2 boneless chicken breasts
- 1/2 cup Ken's Caesar Salad dressing
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 cup sliced portobello mushrooms
- 1/2 cup sliced sweet onion
- 4 fresh croissants or favorite sandwich bread
- 4 slices swiss cheese
- Mayonnaise
Instructions

Slice each chicken breast into thin cutlets. Season with garlic and onion powder and put into a bowl. Pour Caesar dressing over the chicken and blend.

Heat a small sauce pan and add 1 tblspn of butter and 2 tblspn of EVOO. Add onions and mushrooms and sautee.

Remove onions and mushrooms from pan and drizzle more olive oil. Place chicken in pan and turn once the side is done. Place a slice of swiss cheese on top of the chicken and allow to melt. Repeat until all chicken is cooked. Dress each roll with mayonnaise and place chicken on top, smother with onions and mushrooms and serve while hot.
Recipe Notes
If you're not a mayonnaise person, you can substitute it with honey mustard which tastes just as great.
