“TLC” Italian Chicken Cutlets

5 thinly sliced chicken cutlets Β  Β 1/4 cup Italian seasoned bread crumbs Β  1/4 cup grated Parmesan cheese 1 tblspn Victorian Seasonings Tuscan Blend Β 1 tspn Dean&Jacob Spicy Garlic Β 1/4 cup Olive Oil Β  Season chicken with spicy garlic. Β In a small dish, combine Tuscan seasoning, bread crumbs and cheese. Β Heat olive oil in frying pan. Β Dip each cutlet in bread crumb mixture and thoroughly coat. Β Place in heated oil and fry until golden brown. Β  Dress with your sandwich using your favorite roll, mayonnaise, lettuce and tomato and totally enjoy!

“TLC” Shrimp Queso Dip

Want a cheesey shrimp dip to serve at your next gathering? Β Here’s a quick, easy deliciousΒ recipe that everyone will love.

Ingredients: Β Queso Cheese Dip (I picked up this container of Casa Cucina Queso Cheese dip from Costco) Β  1lb of medium shrimp cleaned and deveined Β 1 tblspn Victoria Seasonings Smoky Paprika Chipotle SeasoningΒ  Β  1 tblspn Dean&Jacobs Spicy GarlicΒ  Β  Β 2 tblspn Olive Oil Β  Β  Cut shrimps into cubes Β  Heat olive oil in pan and add shrimp. Season with smoky chipotle and spicy garlic, sautee until shrimp are done. Β Empty cheese into the same pan and stir until melted. Β Transfer to your warming dish and serve with your favorite tortilla chips.

“TLC” Seasoned Fries

One thing I always enjoy making when it’s a hamburgers night for dinner is my own seasoned fries. Β To me, they’re so much better than bought fries. Β Sure it requires just a bit more effort but they’re so worth it. Β It’s such a simple recipe I feel bad to post it but why not? Β they’re good..

Ingredients: Β Start with about 2- 3 potatoes, peeled and sliced into strips Β Dean & Jacobs Spicy Garlic Β onion powder black pepper and Ms. Dash table-blend Β and vegetable oil for deep frying

Season fries generously with the above ingredients.. Β dip into hot grease and fry until golden

TLC’s Flank Steak Fritatta

I love making breakfast Fritatta. Β They’re easy and you can put whatever you like in them. Β Today I usedΒ some leftover grilled flank steak. Β I decided to chop a selection of fresh herbs I have growing along with mushrooms and onions.

Chop all ingredients and sautee them in olive oil and butter. Β  Beat 7 large eggs and pour in pan. Β Sprinkle top layer with grated pepper jack cheese (or whatever cheese of choice). Β  Bake 15 minutes.

 

TLC’s Lobster Ravioli with Cream Sauce

While visiting Costco, I came across Lobster Ravioli. Β I had not tried them andΒ itΒ sounds delicious so I figured I’d give them a try. Β I’m glad I did – they were pretty darn good.

To make the ravioli, just simply boil them in water for about 5 mins – drain. Β Recipe for Β cream sauce: Β  Β  3/4 cup heavy cream Β  2 tblsp butter 1/2 cup grated Parmesan cheese 1 clove garlic, minced Β  1 tsp chopped fresh parsley Β  Β 1 tblsp olive oil In medium sauce pan, add olive oil. Β Heat oil on medium high heat. Β Add garlic and parsleyΒ – sautee about 2 minutes. Β Add heavy cream, butter and cheese. Β Stir while cheese melts to maintain a smooth consistency. Β Once sauce thickens, lower flame to simmer, add ravioli and simmer approximately 2 minutes. Β Serve hot.

TLC’s Steak Omelet

Went to dinner and couldn’t eat all my steak, so the next morning I decided to use it to make a Steak Omelet. Β Sliced the steak in thin strips, 2 mushrooms sliced, chopped a little onion, 1/4 tsp Victoria Tuscan Seasoning, 1/4 tsp Dean & Jacob Spicy Garlic, 2 eggs-beaten, grated monterrey jack cheese,Β  Add 2 tblsp olive oil and 1 tbsp butter in omelet pan. Β Add first fiveΒ ingredients and sautee. Β Pour egg inside and cook. Flip once all liquid is cooked and sprinkle cheese inside and fold close. Β Omelet is done when cheese is melted. omelet1

 

TLC’s Tuscan-Parmesan Potatoes potatoes1

4-5 Β peeled russet potatoes Β  1 small Vadalia onion slicedΒ  1 1/2 tsp Victoria TuscanΒ Seasoning Β 1 1/2 tsp Dean & Jacob Spicy Garlic Β  3 tbsp Olive Oil Β  2 tbsp butter 2 tbsp water Β  Grated Parmesan CheeseΒ Β Β Β Β  (hint: to order the Victoria Tuscan Seasoning and Dean & Jacob Spicy Garlic click here and here) Cut potatoes in bite size chunks. Β Heat cast iron skillet add olive oil and butter using high heat. Β When butter melts, add potatoes and onions. Β Stir coating with oil. Β Add spices and stir -coating generously with the spices. Β Cook approximately 15 mins on high, paying close attention to not burning. Β Sprinkle with water, and adjust heat to low. Β Cover and simmer. Β This should create a steamy affect to soften potatoes. Β Cook approximately another 10 mins giving a quick stir. Β Once potatoes are browned and moist, sprinkle generously with Parmesan cheese. Β  Serve hot.

TLC’s Shrimp Fried Rice rice3

I’ve tried a few brands of yellow rice and Goya makes the best, hands down.Β  Well here’s a delicious recipe for shrimp fried rice.Β  Cook the rice according to the directions on the box, except substitute water for chicken broth.Β  Add 1tblspn olive oil, 1 tblspn of chopped fresh cilantro and 1/2 tsp garlic powder.Β  Bring to a boil and simmer.Β  Sautee 1 pound of cleaned and deveined shrimp, 1/2 cup slice portobello mushrooms, 1/2 cup shallots.Β  Season with Dean&Jacobs Spicy Garlic while sauteeing.Β  Once rice is done, add to sautee pan.Β  Do a quick stir fry and voila!Β  The blend of seasonings give this dish a complete THUMBS UP!

 

Grilled Rack of Lamb – Roasted Parmesan Potatoes – Sauteed Broccoli Florets

Lamb Rub – Β  Β 1 1/2 tblsp kosher salt Β 2 tblsp rosemary Β 4 garlic cloves minced 1/2 cup dijon mustard 1 tblsp balsalmic vinegar Β put all ingredients in a food processor and blend… Make a few small slits in lamb and rub all over lamb – marinade for 30 minutes. Β  Grill until done – Remove from grill, cover and let rest for about 5 minutes before cutting Roasted Parmesan Potatoes – Β  2-3 Yukon Gold Potatoes peeled and cubed Β  3 tblsp olive oil 1 tbsp Dean & Jacob Spicy Garlic ( if you don’t have spicy garlic – use 1/2 tsp garlic salt 1/2 tsp salt 1/2 tsp crushed red pepper) Β 2 tsp paprika Β 1 tsp black pepper Β 4 tblsp parmesan cheese Β  Β  Mix all ingredients in a bowl making sure potatoes are well coated and transfer to greased baking dish. Β Roast in preheated ove at 425 for about 15 Β minutes. Β  Β Give them a quick toss and roast another 10 minutes or until they are golden. Β  Remove from oven and give a light sprinkle of parmesan cheese and sea salt. Sauteed Broccoli Β – Β CoatΒ sautee pan with Pecan Oil (or EVOO) – add 1 clove of garlicΒ minced and broccoli,Β sautee over medium high heat. Β Stir to coat broccoli Β (approx 5 mins). Β Add 1/4 cup of chicken stock and simmer about 2-3 mins.

 

TLC’s– French Toast

3/4 cup heavy whipping cream Β  Β  1/4 cup International DelightΒ French Vanilla Coffee Cream Β 2 lrg eggs beaten Β  1/2 tsp cinnamon Β  1 tsp vanilla Β  Β fresh loaf of french bread sliced (to your desired thickness) Mix all ingredients together with egg beater until well blended. Β  Add bread, one slice at a time, soaking each side with mixture. Β Place on plate. Β Heat pan, add butter and fry each slice – turning when done. Β Sprinkle with powdered sugar, add syrup and fruit if desired. Β It’s so simple and simply delicious… mmmmm…..”c’est bon

TLC’s – Blackened Grilled Salmon

This is a simply delicious grilled blackened salmon with a touch of sweetness by using Β 4 basic ingredients: Β  Fresh Salmon (skinned) Β  Β Β Β Zatarains Blackened Seasoning Β  Β  Garlic Powder Β  Olive Oil Β  Β Honey Generously season first with Zatarains, then sprinkle with garlic powder Β and drizzle lightly with Olive Oil

Β  Β  Β  Β  Β Β 

Rub into fish and repeat steps on other side

Grill and until done approximately 15 -20 mins… Remove from grill. Β Place in dish and drizzle with honey immediately. Β Cover with foil and let rest approximately 5 minutes or until honey has dissolved in salmon. Β  Serve with a side salad makes a delicious meal in less than 40 minutes.

 

E-Z Potato Pancakes

Got leftover mashed potatoes.. here’s a simply delicious recipe for them.. 2 cups mashed potato Β  Β 1 cup shredded mozzarella cheese Β  Β 1 large eggΒ  Β 1/2 tsp salt Β  Β 1/2 tsp garlic powder Β  Β  Β  Β  Β  Β  Β  Β 1/2 tsp onion Β  Β 1/4 tsp pepper Β  Β 1 large egg beaten Β  Β 1 cup fresh bread crumbs Β  Β 1/4 vegetable oil Combine first 7 ingredients and mix. Β  Heat oil in frying. Β Scoop potatoes and form patties Β and brush each pattie with beaten egg. Β Coat with bread crumbs and fry in vegetable oil.

TLC’s – Creamy Shrimp Alfredo Β 

Here’s a simply quick and easy delicious recipe 1 lb of peeled and deveined shrimp Β  Β 3 cups boiled bowtie pasta Β  Β  2 cups heavy cream Β  1 1/2 cup grated parmesan cheese Β  2 tblsp butter Β  dash of nutmeg Β  1/4 tsp ground sage Β  1/8 black pepperΒ  2 tblspn Victoria Seasonings Tuscan BlendΒ Β  2 tblspn Dean & Jacob Spicy Garlic Pour olive oil in largeΒ non-stick pan and sautee shrimp. Β Season shrimp with Victoria Seasonings Tuscan Blend and D&J Spicy Garlic.

Removed cooked shrimp from pan.Β  Using same pan, pour heavy cream in andΒ Β bring to a bubbly boil. Β Add parmesan cheese and butter. Β Lower heat and simmer until sauce thickens. Β Add remaining ingredients. Β Stir in boiled pasta and shrimp. Β Cover and simmer – occasionally stirring, approximately 15 minutes.

 

Buttermilk Pancakes

After living on toast andΒ Β tea all week, come the weekends I look forward to making a good breakfast.. and buttermilk pancakes from scratch always hit the spot. Β  Here’s the recipe for these light and fluffy breakfast favorites

2 cups all-purpose flour Β  Β 2 tsp baking powder Β  1 tsp baking soda Β  1/2 tsp salt Β  3 tbsp sugar Β  Β 2 lrge eggs, lightly beaten Β  Β 3 cups buttermilk Β  Β 4 tblsp melted butter Β  1 tsp vanilla extract Combine dry ingredients in mixing bowl and whisk together. Β Add eggs, buttermilk, and melted butter. Β Whisk to combine, then add vanilla extract and give another quick whisk. Β Heat griddle and test for heat.. (sprinkle with water and if it pops -it’s ready. Β Coat griddle with a small amount of vegetable oil and drop batter inΒ pan. Β Once it starts bubbling on top Β flip over. Β PancakeΒ is done when bottom is golden brown. Β Repeat to finish batter. Β Stack pancakes on top of each other adding butter between layers for an extra buttery flavor. mmmm.. I can’t wait for Saturday..

note: Β  you can add blueberries to the batter for a extra special touch

TLC’s Shrimp Scampi

I’ve tried several different recipes for Shrimp Scampi. Β Each recipe had a different taste so what I decided to do was combine them to create my own (and I substituted Moscato for white wine).. and it’s simply delicious!

1 pound of shrimp peeled and deveined Β  Β  1 cup of butter Β  Β 2 tblsp crushed garlic Β  1 cup plus 2 tbsp chicken stock Β  Β 3/4 cup of Moscato wine (or anyΒ white wine) Β  Β Β 1 tsp red pepper Β  Β 2 tbsp Victorian Seasonings Tuscan Blend Β  2 tbsp Dean & Jacob Spicy Garlic seasoning In a large pan, Β sautee shrimp in olive oil. Β Season shrimp with Tuscan and Spicy Garlic seasonings. Β Remove shrimp from pan. Β In the same pan melt butter. Β Add crushed garlic and crushed pepper. Β Add wine and chicken stock. Β  Put shrimp back into pan and simmer.. Β Add cooked pasta to pan and fold into scampi sauce. Β Cover and simmer approximately 3o minutes.

 

 

TLC’s Chicken & Cheese Fritatta Β  With leftover rotisserie chicken from Friday’s dinner, Β I decided to use it for my Saturday breakfast fritatta. Β It’s so simple – let me share the recipe with you.. IΒ finishedΒ carvingΒ theΒ remainderΒ of the chicken and chopped it up some portabello mushrooms (I used 5) half a onionΒ ( chopped) 2 tblspn Victoria Tuscan Seasonings 1 tblspn Dean & Jacobs Spicy Garlic grated pepper jack cheese 8 eggs (beaten) For this recipe, use a pan that you can use on the cooktop and oven Pour olive oil in pan, add butter (about 3 tblspns) and sauteeΒ chicken, onion, mushroom with spices together.. Β pour eggs on top .. top with grated cheese and bake at 350 for 15 minsΒ or util cheese melts and egg feels a bit firm.. (do not over cook).. Slice and serve..mmmmm.. so you see how simple that was? Β You can be as creative as you want and add more to it. Best part – it’s packed with protein Β There are two seasoningsΒ I love to cook with… VictoriaΒ Tuscan Seasoning and Β Dean&JacobsΒ Spicy Garlic!!

    • Hey Linda! Thanks and I’m glad you enjoyed the rice. Sorry, but I’ve never made shrimp & grits..(only because I don’t eat grits – lol- I know..you’re saying “What!! Don’t eat grits!!!” chuckles, but yes, this southern gal don’t eat them. I wish I could help you out on that. But if I hear of one, I’ll definitely let you know.

  3. Sigh….. I always seem to be looking at this when I’m hungry. I literally want to make everything! Everything looks soooo good.

    I’ll start w/the Tuscan potatoes and deviled eggs. …and thanks for the seasonings, I ordered the Smokey Paprika Chipolte, Tuscan and Spicy Garlic.

    Ohhhh and one suggestion is possibly listing the ingredients and there measurements in a “list” …it just makes it easier to read when I’m actually in the grocery store picking up all the ingredients.

  4. Peaches in the pico de gallo? That’s a different twist! I’ll have to try that! I’m a big salmon cake lover. I’ve never tried making them with Old Bay Seasoning. That sounds really good, though. I’ll add some next time I make them! I also like the idea of adding mozzarella cheese to the potato cakes. That should be really good!!! I LOVE my buttermilk pancakes, but yours sound EXTRA delicious!!! And of course, I can speak firsthand to the deliciousness of your banana nut bread!!!!!!! πŸ™‚ πŸ™‚ πŸ™‚
