“TLC” Italian Chicken Cutlets
5 thinly sliced chicken cutlets 1/4 cup Italian seasoned bread crumbs 1/4 cup grated Parmesan cheese 1 tblspn Victorian Seasonings Tuscan Blend 1 tspn Dean&Jacob Spicy Garlic 1/4 cup Olive Oil Season chicken with spicy garlic. In a small dish, combine Tuscan seasoning, bread crumbs and cheese. Heat olive oil in frying pan. Dip each cutlet in bread crumb mixture and thoroughly coat. Place in heated oil and fry until golden brown. Dress with your sandwich using your favorite roll, mayonnaise, lettuce and tomato and totally enjoy!
“TLC” Shrimp Queso Dip
Want a cheesey shrimp dip to serve at your next gathering? Here’s a quick, easy delicious recipe that everyone will love.
Ingredients: Queso Cheese Dip (I picked up this container of Casa Cucina Queso Cheese dip from Costco) 1lb of medium shrimp cleaned and deveined 1 tblspn Victoria Seasonings Smoky Paprika Chipotle Seasoning 1 tblspn Dean&Jacobs Spicy Garlic 2 tblspn Olive Oil Cut shrimps into cubes Heat olive oil in pan and add shrimp. Season with smoky chipotle and spicy garlic, sautee until shrimp are done. Empty cheese into the same pan and stir until melted. Transfer to your warming dish and serve with your favorite tortilla chips.
“TLC” Seasoned Fries
One thing I always enjoy making when it’s a hamburgers night for dinner is my own seasoned fries. To me, they’re so much better than bought fries. Sure it requires just a bit more effort but they’re so worth it. It’s such a simple recipe I feel bad to post it but why not? they’re good..

TLC’s Flank Steak Fritatta
I love making breakfast Fritatta. They’re easy and you can put whatever you like in them. Today I used some leftover grilled flank steak. I decided to chop a selection of fresh herbs I have growing along with mushrooms and onions.
TLC’s Lobster Ravioli with Cream Sauce
While visiting Costco, I came across Lobster Ravioli. I had not tried them and it sounds delicious so I figured I’d give them a try. I’m glad I did – they were pretty darn good.
To make the ravioli, just simply boil them in water for about 5 mins – drain. Recipe for cream sauce: 3/4 cup heavy cream 2 tblsp butter 1/2 cup grated Parmesan cheese 1 clove garlic, minced 1 tsp chopped fresh parsley 1 tblsp olive oil In medium sauce pan, add olive oil. Heat oil on medium high heat. Add garlic and parsley – sautee about 2 minutes. Add heavy cream, butter and cheese. Stir while cheese melts to maintain a smooth consistency. Once sauce thickens, lower flame to simmer, add ravioli and simmer approximately 2 minutes. Serve hot.
Went to dinner and couldn’t eat all my steak, so the next morning I decided to use it to make a Steak Omelet. Sliced the steak in thin strips, 2 mushrooms sliced, chopped a little onion, 1/4 tsp Victoria Tuscan Seasoning, 1/4 tsp Dean & Jacob Spicy Garlic, 2 eggs-beaten, grated monterrey jack cheese, Add 2 tblsp olive oil and 1 tbsp butter in omelet pan. Add first five ingredients and sautee. Pour egg inside and cook. Flip once all liquid is cooked and sprinkle cheese inside and fold close. Omelet is done when cheese is melted.
4-5 peeled russet potatoes 1 small Vadalia onion sliced 1 1/2 tsp Victoria Tuscan Seasoning 1 1/2 tsp Dean & Jacob Spicy Garlic 3 tbsp Olive Oil 2 tbsp butter 2 tbsp water Grated Parmesan Cheese (hint: to order the Victoria Tuscan Seasoning and Dean & Jacob Spicy Garlic click here and here) Cut potatoes in bite size chunks. Heat cast iron skillet add olive oil and butter using high heat. When butter melts, add potatoes and onions. Stir coating with oil. Add spices and stir -coating generously with the spices. Cook approximately 15 mins on high, paying close attention to not burning. Sprinkle with water, and adjust heat to low. Cover and simmer. This should create a steamy affect to soften potatoes. Cook approximately another 10 mins giving a quick stir. Once potatoes are browned and moist, sprinkle generously with Parmesan cheese. Serve hot.
I’ve tried a few brands of yellow rice and Goya makes the best, hands down. Well here’s a delicious recipe for shrimp fried rice. Cook the rice according to the directions on the box, except substitute water for chicken broth. Add 1tblspn olive oil, 1 tblspn of chopped fresh cilantro and 1/2 tsp garlic powder. Bring to a boil and simmer. Sautee 1 pound of cleaned and deveined shrimp, 1/2 cup slice portobello mushrooms, 1/2 cup shallots. Season with Dean&Jacobs Spicy Garlic while sauteeing. Once rice is done, add to sautee pan. Do a quick stir fry and voila! The blend of seasonings give this dish a complete THUMBS UP!
Lamb Rub – 1 1/2 tblsp kosher salt 2 tblsp rosemary 4 garlic cloves minced 1/2 cup dijon mustard 1 tblsp balsalmic vinegar put all ingredients in a food processor and blend… Make a few small slits in lamb and rub all over lamb – marinade for 30 minutes. Grill until done – Remove from grill, cover and let rest for about 5 minutes before cutting Roasted Parmesan Potatoes – 2-3 Yukon Gold Potatoes peeled and cubed 3 tblsp olive oil 1 tbsp Dean & Jacob Spicy Garlic ( if you don’t have spicy garlic – use 1/2 tsp garlic salt 1/2 tsp salt 1/2 tsp crushed red pepper) 2 tsp paprika 1 tsp black pepper 4 tblsp parmesan cheese Mix all ingredients in a bowl making sure potatoes are well coated and transfer to greased baking dish. Roast in preheated ove at 425 for about 15 minutes. Give them a quick toss and roast another 10 minutes or until they are golden. Remove from oven and give a light sprinkle of parmesan cheese and sea salt. Sauteed Broccoli – Coat sautee pan with Pecan Oil (or EVOO) – add 1 clove of garlic minced and broccoli, sautee over medium high heat. Stir to coat broccoli (approx 5 mins). Add 1/4 cup of chicken stock and simmer about 2-3 mins.
3/4 cup heavy whipping cream 1/4 cup International Delight French Vanilla Coffee Cream 2 lrg eggs beaten 1/2 tsp cinnamon 1 tsp vanilla fresh loaf of french bread sliced (to your desired thickness) Mix all ingredients together with egg beater until well blended. Add bread, one slice at a time, soaking each side with mixture. Place on plate. Heat pan, add butter and fry each slice – turning when done. Sprinkle with powdered sugar, add syrup and fruit if desired. It’s so simple and simply delicious… mmmmm…..”c’est bon”
This is a simply delicious grilled blackened salmon with a touch of sweetness by using 4 basic ingredients: Fresh Salmon (skinned) Zatarains Blackened Seasoning Garlic Powder Olive Oil Honey Generously season first with Zatarains, then sprinkle with garlic powder and drizzle lightly with Olive Oil
Grill and until done approximately 15 -20 mins… Remove from grill. Place in dish and drizzle with honey immediately. Cover with foil and let rest approximately 5 minutes or until honey has dissolved in salmon. Serve with a side salad makes a delicious meal in less than 40 minutes.
Got leftover mashed potatoes.. here’s a simply delicious recipe for them.. 2 cups mashed potato 1 cup shredded mozzarella cheese 1 large egg 1/2 tsp salt 1/2 tsp garlic powder 1/2 tsp onion 1/4 tsp pepper 1 large egg beaten 1 cup fresh bread crumbs 1/4 vegetable oil Combine first 7 ingredients and mix. Heat oil in frying. Scoop potatoes and form patties and brush each pattie with beaten egg. Coat with bread crumbs and fry in vegetable oil.
Here’s a simply quick and easy delicious recipe 1 lb of peeled and deveined shrimp 3 cups boiled bowtie pasta 2 cups heavy cream 1 1/2 cup grated parmesan cheese 2 tblsp butter dash of nutmeg 1/4 tsp ground sage 1/8 black pepper 2 tblspn Victoria Seasonings Tuscan Blend 2 tblspn Dean & Jacob Spicy Garlic Pour olive oil in large non-stick pan and sautee shrimp. Season shrimp with Victoria Seasonings Tuscan Blend and D&J Spicy Garlic.
Removed cooked shrimp from pan. Using same pan, pour heavy cream in and bring to a bubbly boil. Add parmesan cheese and butter. Lower heat and simmer until sauce thickens. Add remaining ingredients. Stir in boiled pasta and shrimp. Cover and simmer – occasionally stirring, approximately 15 minutes.
Chocolate Chip Cookies I had a desire for fresh baked cookies hit me last night so I decided to bake some. I searched the internet for a recipe and came across Martha Stewart’s “Soft and Chewy” Chocolate Chip Cookies. These were pretty good. They were soft and chewy, but not quite the ‘”ultimate cookie” I was craving, but.. they did satisfy my sweet tooth.
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1 cup (2 sticks) unsalted butter, room temperature
- 1/2 cup granulated sugar
- 1 cup packed light-brown sugar
- 1 teaspoon salt
- 3 teaspoons pure vanilla extract
- 2 large eggs
- 2 cups (about 12 ounces) semisweet
- 1 cup chopped walnuts
- Preheat oven to 350 degrees. In a small bowl, whisk together the flour and baking soda; set aside. In the bowl of an electric mixer fitted with the paddle attachment, combine the butter with both sugars; beat on medium speed until light and fluffy. Reduce speed to low; add the salt, vanilla, and eggs. Beat until well mixed, about 1 minute. Add flour mixture; mix until just combined. Stir in the chocolate chips. Bake until cookies are golden around the edges, but still soft in the center, 8 to 10 minutes. Remove from oven, and let cool on baking sheet 1 to 2 minutes. Transfer to a wire rack, and let cool completely.
After living on toast and tea all week, come the weekends I look forward to making a good breakfast.. and buttermilk pancakes from scratch always hit the spot. Here’s the recipe for these light and fluffy breakfast favorites:
2 cups all-purpose flour 2 tsp baking powder 1 tsp baking soda 1/2 tsp salt 3 tbsp sugar 2 lrge eggs, lightly beaten 3 cups buttermilk 4 tblsp melted butter 1 tsp vanilla extract Combine dry ingredients in mixing bowl and whisk together. Add eggs, buttermilk, and melted butter. Whisk to combine, then add vanilla extract and give another quick whisk. Heat griddle and test for heat.. (sprinkle with water and if it pops -it’s ready. Coat griddle with a small amount of vegetable oil and drop batter in pan. Once it starts bubbling on top flip over. Pancake is done when bottom is golden brown. Repeat to finish batter. Stack pancakes on top of each other adding butter between layers for an extra buttery flavor. mmmm.. I can’t wait for Saturday..
note: you can add blueberries to the batter for a extra special touch
TLC’s Easy Delicious Salmon Cakes
Omitting bread crumbs keeps these delicious salmon cakes from being dry 1 can of Alaskan Salmon 1/4 cup chopped green bell pepper 1/4 cup chopped onion 1&1/2 tblsp Ole Bay Seasoning 1/3 tsp garlic powder 1/3 tsp cayenne pepper sprinkle of paprika 1/4 tsp black pepper 4 eggs well beaten Extra Virgin Olive Oil In a medium mixing bowl, empty entire contents of salmon. Remove bone cartilege. Flake the contents and add all the dry ingredients along with peppers and onions. Add well beaten eggs to the batter. The batter should have a loose consistency (if not – add another beaten egg). In a medium frying pan coat the bottom with the olive oil. Heat oil for frying (do not burn oil). Scoop out batter and pour into pan ( I use an ice cream scooper because it makes the perfect size pattie) and gently pat down to form pattie. Fry until the edges begin to brown. Flip and continue to fry until the other side is browned. Remove and continue with the remaining batter adding olive oil as needed. Paired with a simple side Ceasar Salad makes a healthy delicious low fat/ high protein easy meal.
TLC’s Shrimp Scampi
I’ve tried several different recipes for Shrimp Scampi. Each recipe had a different taste so what I decided to do was combine them to create my own (and I substituted Moscato for white wine).. and it’s simply delicious!
1 pound of shrimp peeled and deveined 1 cup of butter 2 tblsp crushed garlic 1 cup plus 2 tbsp chicken stock 3/4 cup of Moscato wine (or any white wine) 1 tsp red pepper 2 tbsp Victorian Seasonings Tuscan Blend 2 tbsp Dean & Jacob Spicy Garlic seasoning In a large pan, sautee shrimp in olive oil. Season shrimp with Tuscan and Spicy Garlic seasonings. Remove shrimp from pan. In the same pan melt butter. Add crushed garlic and crushed pepper. Add wine and chicken stock. Put shrimp back into pan and simmer.. Add cooked pasta to pan and fold into scampi sauce. Cover and simmer approximately 3o minutes.
1 3/4 cup all purpose flour 1/2 cup vegetable oil 1 tsp baking soda 1/2 tsp salt 2 eggs lightly beaten 1 /4 cups sugar 1/4 cup plus 1 tblsp buttermilk 1 cup ripe mashed bananas 2 tsp vanilla 1 cup chopped pecans 1 cup chopped dates Sift together flour, sugar, baking soda, ad salt together in large bowl. Combine eggs, bananas, oil, buttermilk and vanilla in another bowl. Add to flour mixture, stirring just util completely combine. Fold in nuts and dates. Pour into greased loaf pan and bake in preheated oven at 325 degree until toothpick comes out clean – about 1 hour 20 minutes.
TLC’s Chicken & Cheese Fritatta With leftover rotisserie chicken from Friday’s dinner, I decided to use it for my Saturday breakfast fritatta. It’s so simple – let me share the recipe with you.. I finished carving the remainder of the chicken and chopped it up some portabello mushrooms (I used 5) half a onion ( chopped) 2 tblspn Victoria Tuscan Seasonings 1 tblspn Dean & Jacobs Spicy Garlic grated pepper jack cheese 8 eggs (beaten) For this recipe, use a pan that you can use on the cooktop and oven Pour olive oil in pan, add butter (about 3 tblspns) and sautee chicken, onion, mushroom with spices together.. pour eggs on top .. top with grated cheese and bake at 350 for 15 mins or util cheese melts and egg feels a bit firm.. (do not over cook).. Slice and serve..mmmmm.. so you see how simple that was? You can be as creative as you want and add more to it. Best part – it’s packed with protein There are two seasonings I love to cook with… Victoria Tuscan Seasoning and Dean&Jacobs Spicy Garlic!!
